Overview

The Department of Nutrition, Dietetics and Food Sciences (NDFS) at Utah State University has an opening for a professional position, manager for the meats laboratory and meat harvest facility.

The manager will supervise and manage operation of the USU Meat Laboratory in the Department of Nutrition, Dietetics and Food Sciences (NDFS) and the USU Animal Harvest Facility in the Department of Animal, Dairy and Veterinary Sciences (ADVS) to maintain their continued grants of Federal and/or State inspection; and their availability for teaching, research and Extension/outreach activities. 

This position is contracted for a full-time position (40 hrs/week) with flexible scheduling to meet the responsibilities of the position. 

Responsibilities

Day-to-day operation of the facilities include:

  • Meat animal harvest and carcass fabrication, meat processing, and retail meat sales.
  • Teaching duties include teaching NDFS 1250 “Sanitation and Safety” and assisting with the laboratory portions of ADVS 3650 “Live Animal and Carcass Evaluation” and NDFS 5020/6020 “Meat Technology and Processing.”
  • Supervise and train students and staff working on projects in the Meat Laboratory and the Animal Harvest Facility.
  • Research duties include, but are not limited to, conducting directed meat science research projects and acting as a liaison to coordinate meat science research with faculty, graduate students, staff, and inspectors.
  • Extension/outreach duties may include, but are not limited to, helping prepare and deliver Extension events in conjunction with Extension faculty.
  • The manager will be expected to prepare meat for consumption at Departmental and/or College events, as requested.
  • The meat manager will also work towards the development of a retail meat store that would provide opportunities for student training as well as the generation of revenue that would support the meat program at USU.
Qualifications

Minimum Qualifications:

  • At least four years of relevant professional experience, or a bachelor’s degree in animal science, meat science, agriculture, or related field and related experience, or an equivalent combination of education and experience.
  • Strong written, verbal and interpersonal communication skills.

Preferred Qualifications:

  • Experience in food safety and meat inspection.
  • Experience in carcass fabrication and value-added product production.
  • HACCP training and certification.
  • Experience with teaching and mentoring students.
